A healthy and fresh pasta salad with tuna, cherry tomatoes, mushrooms and rocket. A summery recipe, quick and fresh, easy to prepare and very tasty! Perfect to use take-away, for a pic-nic or a day out!

  • 300 gr Penne pasta
  • 20 cherry tomatoes
  • ½ cup Extra Virgin olive oil
  • 1 clove of garlic
  • 10 mushrooms
  • Rocket
  • 200 gr tuna
  • Oregano and salt

Preparation:

First of all prepare the salad by cutting the cherry tomatoes into four wedges and the mushrooms into thin slices. Mix in a bowl and add the tuna. Season it all with Extra Virgin olive oil, garlic, oregano and a pinch of salt. Let the salad rest for at least half an hour. Meanwhile, cook the pasta in salted water and rinse the rocket.
Season the pasta with the salad previously prepared, add the rocket. Refrigerate and serve cold.
