This delicious recipe of the fried artichokes has been gently offered by Anna, one of our dearest followers, an authentic pugliese and advocate of her land! She often tempts us with photos of her delicious dishes and, because we certainly like to see but we’d also like to taste, we asked her to share some of her recipes so that we can prepare them at home.

Here is the recipe for the fried artichokes, an Italian dish pretty simple to prepare and always very appreciated. It can be served as an appetizer or as a side dish. Enjoy!
Time: 30 min
- 10 artichokes
- 3 eggs
- Flour (what needed)
- Salt and Pepper
- Oil for frying
Clean the artichokes by removing the outer leaves and the tips. Split them in half, remove their “beard” and cut in smaller slices in approximately 6 parts. Aside beat the eggs with the flour and dip in the artichokes. Mix well, add a pinch of salt and pepper and then fry the artichokes in boiling oil. To avoid the artichokes blackening before the coating, put the artichokes in a bowl with water and lemon juice.
Options for the coating: in alternative to the batter above, you can also fry the artichokes only with flour or bread crumbs, or with a batter of beaten egg whites or even only with flour, salt and white wine or beer.
