We all love biscuits, in particular if they are made with healthy ingredients, have a great taste and are low in calories!
So today we’re sharing with you this delicious recipe that has as main ingredient one of the pillar of the Mediterranean diet: the Extra Virgin Olive Oil, for convenience also indicated as EVO Oil.
To add a more Southern touch, we have covered the biscuits with a layer of sesame seeds, getting a perfect nutty taste and a delicate crunch.
Of course you can opt for different kind of seeds, like chia or flax seeds, as you like.

- 200 gr flour
- 50 gr sugar
- 50 gr EVO oil
- 1 tablespoon honey
- 1 egg
- ½ tablespoon vanilla powder
- ½ teaspoon baking powder
- Sesame seeds
- Pinch of salt
Beat the egg with the sugar, honey and olive oil. In another bowl combine all dry ingredients: flour, salt, vanilla and baking powder.
Use a rubber spatula to stir the liquid mix into the dry
one, then use your hand to mix until you have a nice and smooth ball of dough.
Roll it out roughly between two foils of parchment paper and place it in the fridge for about 30 minutes.
In the meantime, preheat the oven to 180 degrees.
Take the pastry out of the fridge, unwrap it and roll the dough out to 5 mm thick and cut into desired shapes. Then cover with sesame seeds. Place the cookies onto a lightly oiled cookie sheet and prick them with a fork.
Bake the cookies for 12 to 15 minutes, until lightly golden. Cool a couple of minutes, then remove the cookies to a rack to cool further.
Store the cookies in an airtight container with a vanilla pod (no need to use a new one, you can use an already opened vanilla pod, it will have a persistent scent as well). You can keep the cookies crisp for about a week, greedy thieves permitting.
