  • 100 gr of asparagus
  • 30 gr breadcrumbs
  • 40 gr Parmesan cheese
  • 3 eggs
  • Pepper
Preparation:

Break the asparagus, wash and blanch in salty water for 2 or 3 minutes. Drain and add remaining ingredients. Mix well and shape the balls, if the dough is still a little hard, add another egg. Fry in plenty of olive oil and serve hot. Buon Appetito!
